The Molecular Story
Beta-casein is a chain of 209 amino acids. The critical difference between A1 and A2 milk lies at just one position — number 67.
In A2 milk, Proline holds the chain together firmly. In A1 milk, Histidine at the same position creates a weak point.
During enzymatic digestion, this weak point can break open, potentially releasing a 7-amino-acid peptide called BCM-7 (beta-casomorphin-7) — a bioactive fragment studied for its opioid-like receptor interactions in the gut.
